Linus Pauling Institute Webinar by Emily Ho - How the diet affects cancer - Smoking causes 30% of all cancers, diet causes 35%! The main dietary contribution is from non-marinated meat cooked well done at high temperature, which produces chemicals similar to those in smoke: polycyclic aromatic hydrocarbons, heterocylic amines, and nitrosamines. It has been known for years that 4 legged meat and preserved meats cause cancer, but it has been in the news recently because WHO has recognized the overwhelming evidence. Grilled meat has 164ppm carcinogens, vs. 200-300ppm in polluted urban air. To minimize the risk of meat, cooking just to medium or rare is about 5x less carcinogenic than well done. Marinated meat is about 10x less hazardous.
To reduce cancer risk, eat cruciferous vegetables. They taste bitter because of the anticarcinogens like sulforaphane in broccoli. Cook 5 min or less so some live cells persist with enzymes that activate the anticarcinogens; the veggies should be crunchy. 3 servings/wk reduces cancer risk 72%. Soy and green or white tea reduce cancer risk. Black tea reduces risk of cardiovascular disease.
There is a paradigm shift in the cause of cancer. Although DNA mutations (that are inherited) are necessary, it is mostly epigenetic (epi) changes (which are transient) that cause progression and metastasis. Epi changes include noncoding RNAs, methylation of CpG islands (DNA sequences), and histone modifications that control DNA unwinding. These epi changes can be caused and reversed by harmful and good foods in the diet.
Eating more fruits and vegetables is helpful - only 25% of people eat 5 to 9 servings recommended. Green tea, cruciferous veggies, spices esp. turmeric and cayenne and garlic, soy are all good, and no 4 legged meat!
